Taste of the Broncos chef Q&A: Mercantile's Matt Vawter

What is it about Taste that makes you want to be involved in the event?*

It is a chance to cook with the Broncos and to help a great cause with donations to the Food Bank of the Rockies. The event embodies the same values that are important to us, teamwork and feeding people.

What makes this event different from other food festivals in Denver?

I am a Colorado kid, and I have been a huge Broncos fan my whole life. There is no other event where you get to cook at Mile High with players from the team!

If you know what dish you're going to cook for your booth, why did you pick that dish?*

The dish incorporates BBQ and refreshing summer salad. It is elevated tailgating food.

Which Broncos player would you pair with your dish in your booth?

Domata Peko, because our dish has flavors that he would have been accustomed to while growing up in the Pacific.

If you could cook one meal for Von Miller, what would it be?

Our current BBQ short rib dish, smoked beef short ribs, local grits, fried green tomatoes and Olathe sweet corn. I think this dish would be comforting for Von and take him back to memories growing up Texas.

What is the one reason you would encourage fans to come to the event?

Three reasons: to donate to a truly important cause, making sure people are fed and to meet the players. Eat the food from some of Denver's best chefs at [Sports Authority Field at Mile High].
