Fall Football Recipes
Burger and Home Fries
Burger Ingredients:
• 4 pounds 80/20 ground chuck or burger blend (8-8oz burgers)
• 8 brioche hamburger buns
• 2 tbsp butter melted
• 2 tbsp salt
• 2 tbsp ground black pepper
• 2 medium tomatoes, 8 slices per tomato
• 1 small head iceberg shaved thin
• 1 small red onion sliced thin
• 4 each deli pickles sliced lengthwise (2 burgers per pickle)
Home Fries Ingredients:
• 4 tbsp grape seed oil
• 2 yellow onion, sliced
• 2 pounds fingerling potatoes cut in half lengthwise
• 4 tsp kosher salt
• 2 tsp freshly ground black pepper
• 2 each lemons for juicing
• 1 tbsp chopped parsley
Mini Pizzas and Side Salad
Mini Pizza Ingredients:
• 2 lbs fresh pizza dough cut into 4-ounce portions
• 1/4 cup all-purpose flour for rolling
• 2 cups basil pesto
• 32 slices plum (Roma) tomatoes
• 2 cups shredded mozzarella cheese
Side Salad Ingredients:
• 8 cups arugula, washed and well drained
• 1 each fennel bulb, sliced very thin and soaked in ice water
• 1 red onion, shaved thin and soaked in ice water
• 24 cherry tomatoes
• 1 tsp. dijon mustard
• 4 tbsp. olive oil
• 2 lemons, juiced and squeezed
• 1 tsp. kosher salt
• 1 tsp. freshly ground black pepper
• 1 cup shaved Parmesan cheese
