Bradley's Frozen Berry Bites

Ingredients

1 32 oz Yogurt

12 Cupcake/Muffin Cup Liners

1 Handful of Frozen or Fresh Raspberries

1 Handful of Frozen or Fresh Blueberries

*Berries can be switched out for any type of fruit you like! 

Directions

1. Gather all your ingredients together.

2. Lay out 12 cupcake cups on a small baking sheet or tray (this will need to fit in your freezer).

3. Using a spoon, drop some yogurt into the bottom of each cup until it's halfway filled.

4. Pop a few pieces of each fruit into each cup, pressing them down into the yogurt with your fingertips. (Tip/Trick: Try making a smiley face with your fruit!)

5. Place the tray of cups into the freezer and leave in for two hours or until solid.

6. Once frozen through, remove to eat or bag up and pop back into the freezer to save for later.

Brielle's Peanut Butter, Oatmeal, Chocolate Bars

Ingredients

1 c. Dark Chocolate Chips

½ c. Natural Peanut Butter

2 T. Coconut Oil

2 ½ c. Old Fashioned Oatmeal

Chia Seeds (optional)

Directions

1. Place a sauce pan on the stove and heat to medium low heat. Pour in the chips, peanut butter, and oil. Stirring constantly until all melted.

2. Take the pan off the heat and stir in the oatmeal until it is all combined with the chocolate mixture.

3. Grease a 9x9 pan and pour in the mixture. Smooth and flatten with a spatula.

4. Place a sauce pan on the stove and heat to medium low heat. Pour in the chips, peanut butter, and oil. Stirring constantly until all melted.

5. Sprinkle chia seeds on top (optional)

6. Place it in the fridge. Let harden 30 minutes to 1 hour. Cut into squares. Store leftovers in airtight container in the fridge.

Courtland's Crunchy Apple Cookies

Ingredients

16 oz Jar of Peanut Butter

12 oz Semi-Sweet Chocolate Chips

42 oz Old-Fashion Oats

4 Gala Apples

*Apples and toppings can be switched out to preference! 

Directions

1. Slice apples into thin rings and remove core.

2. Spread peanut butter over one side of the ring.

3. Top peanut butter with semi-sweet chocolate chips and oats.

4. Enjoy or put into the refrigerator to enjoy later!

Erica's Apple Cinnamon Energy Bites

Ingredients
1⁄2 c. Almond Butter

1/4 c. Honey

2 c. Oats

3/4 tsp. Cinnamon Pinch of Salt

1 tsp. Vanilla Extract 1/4 c. Ground Flaxseed 1 c. Grated Apple

Directions

1. Combine all of the ingredients in a bowl.

2. Roll into bite sized balls.

Justin's Juicy Fruity Smoothies

Ingredients

32 oz Vanilla Yogurt

16 oz Bag of Frozen Blueberries

16 oz Bag of Frozen Strawberries

16 oz Bag of Frozen Blueberries

1 Orange

1 Banana

½ cup of Spinach

*Berries can be switched out for any type of fruit you like! 

Directions

1. In a food processor or blender add your 32 oz vanilla yogurt.

2. Toss in a handful of frozen blueberries.

3. Toss in a handful of frozen strawberries.

4. Toss in a handful of frozen blueberries.

5. Cut the orange and squeeze into the mixture. (A dab of orange juice can work just as well.)

6. Cut up the banana and toss into the mixture.

7. Add the ½ cup of spinach. (This is optional!)

8. Put the lid on your food processor or blender.

9. Blend the ingredients for a few minutes to make sure all of the frozen fruit is mixed in well.

10. Serve and enjoy!

Miles' Mighty Meatballs

Ingredients

1 lb. Lean Ground Beef (or ground turkey)

½ C. Onion (finely chopped)

¼ C. Dried Breadcrumbs (or 3 pieces of white bread)

2 Garlic Cloves (minced)

1 Egg

¼ C. Parmesan Cheese

3 Tbsp. Ketchup

1 Tsp. Salt

¼ Tsp. Pepper

1 Tsp. Parsley (minced)

*Produces around 30 meatballs

Directions

1. Preheat oven to 400ºF. Spray a large cookie sheet with cooking spray.

2. Mix together onion, breadcrumbs, garlic, egg, cheese, ketchup, salt, pepper and parsley in a large mixing bowl.

3. Once mixed, add your ground beef and gently mix until it's equally combined. Do not overwork the meat!

4. Form your meatballs and place them on the prepped cookie sheet.

5. Bake in the preheated oven for 15-20 minutes, or until the meatballs are browned and cooked through.

6. Once baked enjoy them as they are or try them with your favorite sauce and zoodles, quinoa, brown rice pasta or chickpea pasta!
